What is Astringency in coffee?

Astringency can be difficult to pick out when tasting a sour coffee. The main difference you'll notice is that astringency gives off an unpleasant taste, while some sour notes in coffee (such as grapefruit), might taste pleasant. In tasting notes, astringency is not a desirable flavor.
